Every bean we roast begins its journey high in the volcanic mountains of Santa Cruz, Guatemala. Our coffee is more than a drink—it’s a reflection of discipline, devotion, and purpose.

Our coffee begins its journey in nutrient-dense volcanic soil nestled between three ancient volcanoes. The high elevation and mineral-rich earth produce beans with bold, complex flavors — a gift of the land and altitude.

Harvested by Monks and Local Farmers

Our dedicated team — monks and local workers — carefully handpick only the ripest cherries. Each harvest is a labor of patience and precision, ensuring only the highest quality beans are chosen.

Transported Every Evening

Every day’s harvest is meticulously weighed and carried down from the high-altitude farm to the valley. This daily rhythm preserves freshness and keeps the entire process in sync with nature’s pace.

Dried, Hulled, and Sorted Locally

On local raised beds, the beans are slowly sun-dried to bring out their natural sweetness. They are then hulled to remove the parchment layer and sorted by hand to eliminate any imperfect or damaged beans — a labor-intensive step that ensures consistency and quality.

Shipped to the US

Once fully processed, the coffee beans are bagged, sealed, and shipped directly to the U.S. This method preserves freshness while allowing us to roast in small batches closer to delivery — minimizing waste and maximizing flavor.
